Chipotle Glazed Ribs

These ribs are great. I didn’t know how easy ribs were to make until I tried it. 4 lbs. of ribs will feed 4-6 people, depending on how much meat they like to eat. The chipotle glaze is wonderfully easy and tasty too! These can be made year round, since they are made on an oven.

Any left over glaze can be used on chicken, or makes a great dipping sauce for nuggets. The recipe is easily doubled.

Ribs:
4-5 lbs. pork or beef ribs
1/3 cup salt
1/3 cup sugar
1/4 cup BBQ seasoning

Chipotle Glaze:
3 cups ketchup
1 cup apple cider vinegar
1/2 cup brown sugar
1 can chipotles in adobo, chipotles removed and minced

Place ribs in a large, heavy-bottomed pot and add water to cover. Add all salt, sugar, and BBQ seasoning and bring to a boil. Simmer ribs for 1 hour or until bones are holding on by a thread. Make glaze by combining ketchup, vinegar, sugar, and small amounts of minced chipotles and sauce to taste (I used about 1/4 cup total). Add some of the rib broth to thin out glaze if necessary.

Preheat broiler. Place the broiling rack on the second from the top space. When the ribs are done boiling, place the ribs on a broiling pan and let sit for 10 minutes, to let excess water steam off.

Baste the ribs, 2-3 times on each side to completely coat all the meat and broil for 4-5 minutes with the bottom side up first. Flip ribs and broil for 4-8 minutes more. Enjoy!
