Yacht Club Lemonade
In sixth grade I became friends with Beth, a cute little thing, who took me to the Detroit Yacht Club. Her family would invite me to swim inside (fancy), dress up, and eat dinner. I loved eating there because the things they served were familiar, but with a snobby twist. We sat next to fountains, in big glass rooms, overlooking tons of yachts. Next time I find me a friend with a yacht. Love ya, Beth!
Serve this in a glass pitcher with tall glasses. Leave some of the lemon halves in the lemonade to make it look nice. You can also add some whole mint sprigs, and wear a pink apron. Go ahead, be the MILF who’s getting her lawn mowed, or pool cleaned.
The easiest way I found to strain the sugar-mint syrup is to use a mesh strainer, but if you don’t have one, just fold a piece of paper towel over two or three times, and hold over pitcher, or even better…put syrup into a zip lock bag and cut a very small hole in one corner. Squeeze syrup out into pitcher. Don’t worry about any small bits of mint in the lemonade; it is homemade, after all!
Yacht Club Lemonade
Serves 6
1 1/4 cup water
¾ cup sugar
10 whole spearmint sprigs (more for garnish)
6 lemons, halved
1 46oz. can pineapple juice (shaken a few times in case of settling)
Ice
Bring water to a simmer over medium heat. Add sugar and whole spearmint sprigs, and stir to dissolve sugar. Turn off heat and allow mixture to steep for 10 minutes. Juice lemons into pitcher, adding 3 squeezed lemon halves to pitcher for effect. Add pineapple juice and a handful of ice. Strain sugar and mint syrup into pitcher and mix well. Add ice and fresh mint sprigs as desired.
